Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection....observed at 4:50 clam chowder 52° in a deeper than 4 inches container with covered at walk in cooler. Take another 5:14 it was dropped 48°. Operator dipping ice stick in the food.
Handwash sink used for purposes other than handwashing....some food evidence ( cut lettuce, cut carrots) in handwashing sink at kitchen. Operator cleaned.
Employee beverage container on a food preparation table or over/next to clean equipment/utensils...open beverage glass at kitchen, employee moved.
