Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. beef patty (97F - Hot Holding) Per operator, out of temperature for approximately 30 minutes. Operator decided to use time control. Time control procedure emailed to operator. Advised operator to place time mark for remaining 3.5 hours.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. oxtail (121F - Cooling) at 12:20; cooling since 12:05 - 117F at 12:47 Observed on stove. At current rate of cooling product will not reach 70F within 2 hours. Operator moved product to walk-in in cooler.
Handwash sink not accessible for employee use at all times. Pans stored on top of handwashing sink. Operator removed pans.
