What the inspector wrote — 5 findings
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed : rice in the kitchen reach-in cooler at 45°. Operator said for morning prep she has been in and out of the cooler. Also, she had placed in the reach-in cooler a different pot of rice cooked today, that was now at 61°. Operator adjusted the thermostat from 3.5 to 3 to allow for a buffer.
