Then proceeded to handle clean tongs and spatulas with out changing gloves and washing hands. Educated operator. They then changed gloves and washed hands

No sanitizer of any kind available for warewashing. Only use single-service items to serve food to customers until sanitizer is available for warewashing. Operator stated they ran out of bleach they usually use and is on order. Operator went to store to get bleach. Operator came back with bleach approved for food contact surfaces.
