Raw beef stored over ready to eat clams and cooked papaya in reach-in freezer near POS.-not all products are commercially packaged. Also, raw chicken stored over ready to eat plantains in last fridge on left- not all products commercially packaged. Also, raw beef stored over ready to eat french fries in reach in deep freezer at front counter. Operator rearranged shelves in fridge and freezers to properly store.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. shredded queso cheese (48F-49F - Cold Holding); butter (51F - Cold Holding) in fridge across from kitchen entry door. Operator stated items placed in fridge today but maybe door didn't close fully. Operator removed TCS foods and placed in nearby cooler to chill.
Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Sanitizer Bucket (Chlorine 200+ppm). Operator added more water to dilute the sanitize solution. Retested at 100ppm.
Spray bottle containing toxic substance not labeled. Unlabeled Spray bottle containing toxic substance stored on shelf near triple sink. Operator labeled spray bottle of bleach.
Bowl or other container with no handle used to dispense food. Bowl without handle used to dispense sugar in prep area. Operator removed bowl and replaced with cup that has handle.
