Employee failed to wash hands before putting on gloves to initiate a task working with food. Employee entered kitchen put on gloves and began preparing food for customers without washing hands. Operator discussed with employee who then washed hands and changed gloves.
Employee switched from working with raw food to ready-to-eat food without washing hands. Employee handled raw salmon while plating and then handled cooked beef empanada while reheating without washing hands. Operator discussed with employee who then washed hands.
Stop Sale issued due to food not being in a wholesome, sound condition. Commercially processed reduced oxygen packaged fish (seared tuna) bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. See Stop Sale.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. At prep table next to oven; cooked beef empanada (84F - Cooling 9:05am/84F 9:35am). Operator stated cooling less than 30 minutes, at this rate will not reach 70F within 2 hours, moved to reach in freezer to facilitate faster cooling.
