The following items were prepared and packaged using ROP cook-chill on 09/14/25; [4 bags made in house Alfredo sauce and 1 bag of meat sauce ]. These items were observed in walk-in cooler/freezer on 09/17/25 more than 48 hrs after ROP cook- chill packaging based on production date labeled on packing. Operator does not have an Approved HAACP plan for ROP cook-chill at this time and per company policy conducts ROP cook-chill using 48-hour exception.
