Observed zip-tied bags of marinara sauce being chilled in an ice bath. Manager stated that their sauces and soups are placed in the zip-tied bags during the chilling and re-heating process but are not held in the bags for more than a few hours. They are placed in metal containers during refrigeration storage, then replaced into zip-tied bags for re-heating.
