Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Sanitizer Bucket (sink and surface 700+ppm Operator corrected to 700ppm sink and surface sanitizer.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Cook station 2: cooked mushrooms (47F - Cooling) at 1:53 since 1:23 - 46F at 2:58 At current rate of cooling product will not reach 41F within 4 hours. Operator placed in walk in cooler to quick chill.
Operator is doing a special process, conducting reduced oxygen packaging, cooking time/temperature control for safety food to a time and temperature combination lesser than those in the Food Code or operating a molluscan shellfish tank for human consumption without a HACCP plan approved by the Division of Hotels and Restaurants. Operator conducts Cook/chill for (pomodoro, sugo marinara) sauces. No approved haccp plan available at time of inspection.
