Must submit plans and plan review application to DBPR H and R Plan Review office located at 2601 Blair Stone Rd., Tallahassee, FL 32399-1011. Plans must be submitted AND approved within 60 days. Commercial dish machine was installed without submission of plans to Plan Review. Spoke directly with Plan Review and plans were updated.
No container installed for catching grease from hood drip tray. Observed no hood drip container at the cook line. Operator installed brand new drip container.

Reach-in cooler interior/shelves have accumulation of soil residues. Observed reach in cooler in back prep area with soiled interior. Operator wiped down immediately.
