Employee removed from cooler to refill buffet which caused product to rise in temperature. Advised operator of proper cooling parameters. At the current rate, product will not reach 41F within 4 hours. Operator place product into walk in cooler to fascilitate cooling.

Heat strip failed to turn black to indicate the sanitization temperature of 160 degrees Fahrenheit was achieved on the dish surface and/or high temperature holding thermometer did not reach 160F. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Thermo tape failed to turn black. Tested 3 times.

As per manager one employee hired within last 60 days and no food handler training for that employee. Explained. Manager does have the copy of food employee reporting agreement form.
