Cooked seafood not reaching a minimum internal temperature of 145 degrees Fahrenheit for 15 seconds. Asked operator to take a temperature of fish once done cooking. Operator used probe thermometer, stated it's done and the temperature was 139F. Chef put fish back on the grill, second temp 149F. Discussed calibrating thermometer and operator placed thermometer in ice bath.
