Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed items in reach in cooler above 41 F on cook line Chicken Tender (45F - Cold Holding); Scallops (48F - Cold Holding); Shrimp (45F - Cold Holding). Manager stated they were prepped in the morning put on the line approximately 30 mins before temperatures were taken. Manager removed items and placed them in freezer.
