Establishment using a sanitizer solution that does not meet the requirements specified in 40 CFR 180. Only use single-service items to serve food to customers until approved sanitizer is available for warewashing. -manager stated going to store at end of event prior to washing dishes from event to purchase bleach that is safe for food contact sanitizing.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. cooked beef (46-47F - Cold Holding); black beans (48F - Cold Holding); cream cheese (46-47F - Cold Holding); sliced american cheese (47F - Cold Holding) i side cooler at entrance to trailer. Manager states brought out below 41F less than 1 hr. Manager brought several bags of ice to cover food product. Advised manager to bring extra cooler to adequately cover food to chill down as needed if external temperatures are affecting unit during operation. Must be in compliance upon next unannounced inspection.
