See stop sale. Observed in walk in: cooked chicken soup (60F - Cooling); cooked pork stew (60F - Cooling). As per operator, food was placed in cooler day before after cooking it.
Ready-to-eat, time/temperature control for safety food marked with a date that exceeds 7 days after opening/preparation. Observed tuna salad with more than 7 day date mark, operator replaced label; stated it was a mistake.

As per operator, it was prepared and placed on counter less than 3 hours prior to inspection. As per operator, they've been there less than 2 hours prior to inspection. Inspector explained hot and cold holding temperatures, and provided TPHC form.
