Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed in back kitchen, rice cooker; white rice (117F - Hot Holding). Per operator item has been out of temperature for approximately 45 mins. Reheated to 174F.
Chemical test kit not used to ensure proper sanitization of equipment and utensils when using a chemical sanitizer. Observed no chlorine test strip used to test chemical sanitizer.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Observed in flip top cooler next to walk-in freezer, mussels (51-64F @ 3:30- Cooling since 12:00, second temperature 42F at 3:45). Item was being cooled in deep pan which was filled above the fill line. Item placed in walk-in freezer to rapid cool.

Bowl or other container with no handle used to dispense food. In the walk in cooler, in the quinoa there was a pint sized container used to dispense and was stored in the bucket. The item was removed.
