Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. milk (53F - Cold Holding) Observed in reach in cooler. chicken empanadas (169F - Hot Holding) Observed in reach in chest freezer. Per operator, not prepared or portioned today. Per operator, out of temperature for approximately 20 minutes. Operator moved products to freezer and added ice.
Incorrect chemical test kit provided for measuring the concentration of the sanitizer solution used in the three-compartment sink and/or dishmachine. Wrong test kit for quaternary sanitizer. Operator has test kit for swimming pools. Educated operator on appropriate test strips.
