Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In slide door glass display reach-in cooler, cheesecake (44F - Cold Holding). Ambient temperature 54f. Operator stated ambient temperature was 34f this morning. Ambient temperature dropped to 38f during inspection.
