Per operator held out of temperature less than 1 hour. Not portion or prepared today chef placed ice on top of butter pc. Observed on cook line shrimp in buttermilk (41-55F - Cold Holding) not completely in ice per operator held out of temperature less than 2 hours. Operator added more ice to container.
