Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Quaternary ammonium sanitizer bucket greater than 400, corrected to 200ppm.
Thawed portions of ready-to-eat, time/temperature control for safety food rose above 41 degrees Fahrenheit while being thawed under running water. Ground lamb thawing under running water, lamb 71F, operator moved back to walk in cooler, will be prepped today.

Employee handled cell phone then to go bowl without changing gloves or washing hands, discussed proper hand washing procedures with employee, employee removed gloves and properly washed hands
Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner. Ice bucket not inverted, manager inverted ice bucket
