Operator stated they were placed into service approximately 3 hours ago. Items were double-panned and product in lower compartment was at proper temperature. Operator moved product to walk-in cooler for rapid cooling and will monitor closely. cut tomatoes (50F - Cold Holding); shredded lettuce (48F - Cold Holding); guacamole with tomatoes (49F - Cold Holding)
