Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. The following items and cold holding temperatures in the Walk-in Cooler: COLD HOLDING Chicken 50F - 38F 30 minutes later; hot dogs 54F- 40 F - 30 minutes later; items were on rolling rack and been taken out of walk-in-cooler for a 30 minutes. Ambient Temperature of walk-in-cooler 44F before coils were cleaned. Manager placed in walk-in-freezer

Chicken in reach in cooler dated 2/26. Manager advised that Chicken was cooked on 2./26 and immediately frozen and then removed from freezer on 3/2. Chicken did not have date tracking. Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Items stored in ice baths on kitchen prep tables: cheese (44F,51F - Cold Holding). Manager added ice to ice baths to reduce temperature to 41F.

Items stored in front counter warmers: hamburger (114F - Hot Holding); hot dog (110F - Hot Holding). Manager stated items placed in warmer thirty minutes prior to temperature being taken. Items were served during inspection. Inspector provided time as a public health control paperwork to operator. Operator stated these items would be held on time going forward.
