Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Ran the dish machine in the front counter area a few times and the chlorine sanitizer tested at 0 PPM. The inspector observed the chemical line having air bubbles and was not dispensing chemical when sanitization cycle ran.
Dishmachine not sanitizing properly. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Employee set up three compartment sink with quaternary sanitizer testing at 200 PPM in the front counter area.
