Cook-chill reduced oxygen packaged food not packaged immediately after cooking and before reaching below 135 degrees Fahrenheit. When inspector asked Person in Charge if the have changed their process for reduced oxygen packaging of cook chill, PIC stated that establishment cooks sauces and then cools to 65 F before vacuum sealing. Per email dated 12/20/2023 this goes against food code and variance needs to be submitted. Email was received from DHR.Specialprocess@myfloridalicense.com.
