To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Several food handling cooks, bartenders and servers hired over sixty days with no proof of any training.
Bowl or other container with no handle used to dispense food. In flour and rice containers observed cups being used for dispensing. Operator removed cups.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the far maketable, cold hold products at improper temperature on top rail. Employee stated product was in service less than four hours, but lid had been open. Products was placed in ice bath and lid closed to rapidly chill. sliced tomatoes (46F - Cold Holding); sliced ham (48F - Cold Holding); chicken (49F - Cold Holding).
Vacuum breaker missing at mop sink on fitting/splitter added to mop sink faucet. Device is present but is attached at faucet, not at hose side of splitter. Educated operator on proper placement of device when a splitter is present.
Handwash sink not accessible for employee use at all times. Observed a stack of metal insert pans in the handwash sink on the cook line. Employee removed pans.
