Dishmachine Chlorine sanitizer 0ppm. Advised operator to not use dishmachine until repaired. Establishment is unable to wash, rinse, sanitize any equipment due to not having a 3 compartment sink.

Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Walk in cooler: tuna salad (50F - Cooling) at 10:30 since 9:30 - 50F at 10:50 At current rate of cooling product will not reach 41F within 4 hours. Operator moved to reach in freezer to quick chill.
