Equipment and utensils not properly air-dried - wet nesting. Observed multiple wet containers stacked to allow no airflow at dish shelf. Operator unstacked the containers to allow airflow.

Observed wiping cloth chlorine sanitizer solution over 200ppm at prep area. Operator corrected to 100ppm on test strip.
Buildup of food debris/soil residue on equipment door handles. Observed residue buildup at walk in cooler handle. Operator cleaned the handles.
