Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Fried chicken 224F being held in fryer basket over hot oil. The bin where the fried foods are hot held are in dis repair. The fried chicken was held out of temperature for less than 4 hours. The suggestion was mad to hold fried food in heated unit over the are where sandwiches are made to maintain a temperature at 135 F or above. The chicken was reheated to at 3:15 to 165F.
