In the walk in cooler, hotdogs (47F - Cold Holding); cooked beef (47F - Cold Holding); chili (46F - Cold Holding); cheese (47F - Cold Holding); chicken (46F - Cold Holding) per operator in and out of the walk in cooler frequently. Ambient air of walk in cooler at 44F. Operator opened freezer door to assist cooling of the product. At conclusion of inspection, all products dropped 1/2 degrees, hotdogs second temperature (44F - Cold Holding); cooked beef second temperature (45F - Cold Holding); chili second temperature (45F - Cold Holding); cheese second temperature (46F - Cold Holding); chicken second temperature (45F - Cold Holding).
Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking. Sandwich toppings on cook line, cut tomatoes, cut lettuce and cheese missing product time marking. Operator printed time mark and posted on containers.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In warming drawer, hotdogs (120/121F - Hot Holding) operator removed and placed back on flat top grill. At conclusion of inspection reheating up to 142F.
Food-contact surface soiled with food debris, mold-like substance or slime. Drive through soda dispenser with debris/mold like substance build up along dispenser nozzles.
Handwash sink used for purposes other than handwashing. Hand wash sink used as dump sink as evident by ice in sink basin at beginning of inspection.
