Cooked poultry not reaching a minimum internal temperature of 165 degrees Fahrenheit. crispy chicken patty (158F - Cooking) Observed raw breaded chicken cooking in fryer. Basket was removed from frying oil, per operator chicken was done cooking. Operator returned to cooking oil to finish cooking.
