Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Salmon in reach-in cooler under grill at 44f-46f. Salmon determined to be out of temperature for approximately 2 hours. Broccoli cheddar casserole in walk-in cooler close to door at 44f-45f, determined to be out of temperature for approximately 3 hours. Operators applied ice baths and ice bags to rapidly chill items during inspection, bringing salmon down to 40f and broccoli cheddar casserole to 41f within 15 minutes.
Accumulation of black/green mold-like substance in the interior of the ice machine/bin. Interior of ice bin has mold-like substance in corners, along sliding door grooves, and in interior chute.
Equipment in poor repair. Air conditioning in kitchen not functioning. Portable air conditioners are in use while awaiting repairs.
