Ceiling tile missing. Observed : ceiling tile missing by the 3 compartment sink. The tile was found and brought to the area.
Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed : hood filters missing. Some were in the soak tank for cleaning.

Hot water sanitizing dishmachine final rinse not reaching proper temperature at manifold. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Observed: 136° temp shown on the display gauge.
No measuring device available for measuring utensil surface temperature when using hot water as sanitizer in a dishmachine. Observed: no surface temperature holding device.
In-use tongs stored on equipment door handle between uses. Observed: tongs on the edge of cooking equipment, protruding in the walkway. These were adjusted in.
In-use utensil not stored with handle above the top of time/temperature control for safety food and rim of the container. Observed: the precooked shredded chicken scoop, handle touching product. The scoop was adjusted.
Water leaking from pipe and/or faucet/handle. Observed: clear water leaking from under the dipper well cabinet.
Wiping cloth sanitizing solution stored on the floor. Observed: multiple sanitizer buckets with sanitizer stored on the floor of the kitchen. Staff put 2 buckets on shelves away from clean dishes and food.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed: slice cheese at the breader station, 54°. Other items in this unit were at a complying temperature. This was placed below with no lid for quicker cooling.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed: house sauce on the cook line, in a steam well, 117°. This was placed on cooking equipment to bring it to 165 for 1 second.
Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Observed: employee drink on a prep table, this was discarded.

In-use utensil not stored with handle above the top of time/temperature control for safety food and rim of the container. Observed: at the far end of the cook line, in a drawer, chopped/shredded chicken with the portion scoop touching product. The scoop handle was adjusted.

Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Observed: milk at the bar, opened over 24 hours, no date. The milk was discarded.
Food-contact surface soiled with food debris, mold-like substance or slime. Observed: the can opener blade with dried food debris. This was sent to dish. **Corrective Action Taken* ALSO, the bar soda guns and cones have foreign debris in them.
No measuring device available for measuring utensil surface temperature when using hot water as sanitizer in a dishmachine. Observed lack of a surface temperature device for the hot water sanitizing.
