Discussed with operator using time as a public health control and a four hour discard for items that must stay in constant use during busy production. Provided operator time as a public health control form. Operator placed batters back in reach-in cooler after completing orders.

Observed employee enter into restaurant and kitchen from outside and begin work with no handwash. Spoke with employees, employee washed hands before donning gloves to begin work.
