Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Tested less than 100ppm. Operator reset the sanitizer in three-compartments sink, tested 200ppm.

A container of roasted corn (50F - Cold Holding) and blue cheese crumbles (51F - Cold Holding) at salad prep station. Discussed "how much is too much" for food preparation with operator, and proper cold holding for time/temperature control for safety food is 41F or below. Both items moved into reach-in cooler.
