Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed at 9:16 a.m. TCS cheese cold held at 48F in flip top cooler. Cheese stock above chill rim. Per operator, cheese transfer to unit at 6:00 a.m. Operator removed over stock cheese to walk in cooler for quick chill.
