Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed at 9:16 a.m. TCS cheese cold held at 48F in flip top cooler. Cheese stock above chill rim. Per operator, cheese transfer to unit at 6:00 a.m. Operator removed over stock cheese to walk in cooler for quick chill.
Handwash sink not accessible for employee use at all times. Observed handwashing sink blocked with garbage container in kitchen area. Operator removed container.
