Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. At Milk shake machine; ice cream mix (50°F - Cold Holding). Operator stated item not prepared or portioned today, placed in machine less than 2 hours prior, emptied machine and placed in walk-in cooler.
