Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. holding cabinet directly next to breading station: raw chicken (51-54F); milk and egg wash (60F). Unit was turned off due to electrical breaker. Operator states items have been in unit for approximately 2 hours. Operator reset unit and moved items to walk in freezer to quick chill. Retook ambient temperature of unit at 41F and retook temperature of chicken at 43F or below
No paper towels or mechanical hand drying device provided at handwash sink. Observed at ware washing hand wash sink. Operator refilled
Buildup of food debris/soil residue on equipment door handles. Observed at thawing cabinets reach in coolers
