Observed: prep staff adjust glasses and nose, then continue with the same gloves on working on the prep line. The manager redirected the employee, who then washed hand sanitizer added gloves.

Observed: in the cook line, male staff touch(hike) pants, then touch unwrapped buns, then hike pants and adjusted his glasses. It was suggested for a wash and glove change and was immediately done.

No measuring device available for measuring utensil surface temperature when using hot water as sanitizer in a dishmachine. Observed: lack of an irreversible registering temperature indicator for the hi+temp dish wash machine. A yellow thermometer was used, but it could not hold the hi temp at that time. The Manuel was googled for this device, and instructions were retrieved.
