In-use tongs stored on equipment door handle between uses. Tongs hanging on handle of equipment by fryers across from breading station. Operator removed.

Carbon dioxide/helium tanks not adequately secured. CO2 tank by soda bib racks not secured.
Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner. Ice bucket at front of house by office not inverted. Operator placed inverted on counter.
No Heimlich maneuver/choking sign posted. Operator printed poster and posted outside of office.
Unwashed fruits/vegetables stored with ready-to-eat food. Unwashed strawberries and vegetables over prepped food and ice cream. Operator rearranged.

Heat strip failed to turn black to indicate the sanitization temperature of 160 degrees Fahrenheit was achieved on the dish surface and/or high temperature holding thermometer did not reach 160F. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Test strip did not register 160F Operator thermometer read below 150F
