Clean in place equipment not washed, rinsed and sanitized using three distinct steps. Observed employee pre wash food preparation container on the floor of mop sink. Operator was educated and employee informed to clean containers using appropriate wash sink.
Employee personal food not properly identified and segregated from food to be served to the public. Observed 3 bottles of water, one opened and unidentified stored in walk in freezer. Operator removed and stored properly.

Equipment and utensils not properly air-dried - wet nesting. Observed metal food preparation containers being stored in a manner that does not allow proper air drying next to three compartment sink. Operator placed containers in a manner that will allow proper air drying.
