Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Shake mix 46F in dispenser holding unit. Over per hours per operator. Advised operator to discard and keep product on 6hr time plan until machine is repaired
No measuring device available for measuring utensil surface temperature when using hot water as sanitizer in a dishmachine. Heat thermometer doesn't work. Operator tried max temp measuring thermometer and temp registered at 143F. Inspector used his thermometer and temp was 160F. Calibration thermometers with operator. Both ice and boiling method Thermometers reached 32F in ice. And 212F.Advised to possibly get new heat measuring device
Bulk milk dispenser with dispensing tube not cut at an angle. Shake mix dispenser tube. Operator immediately cut at 45 degree angle

Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. At the mop sink when adding a splitter to a hose Bibb a vacuum breaker needs to be added to the unprotected side. Currently the splitter is set up with a water line to a chemical dispenser and the other sides are open. The open side needs a vacuum breaker added. The chemical device has its back flow protection built in. Currently the mop sink faucet is unprotected
Equipment in poor repair. -Walk in freezer has a ice build up on the fans, one fan is not operating. Temperature is 0 -traulsen thawing cabinet will not close tightly (4085) -traulsen thawing cabinet will not close properly (4087) -toastmaster warmer not operating (line) both units are down
Exterior door has a gap at the threshold that opens to the outside. The door frame is damaged at the lock side and needs to repaired
