Observed on cook line two sheet pans one with Cooked chicken at 10:23am(70F cooling) per operator cooling for 5 minutes, at 10:59am 80F cooling and Cooked eggs at 10:33am (70F cooling )per operator cooling for 5 minutes, at 10:59am 80F cooling. Temperature when up as operator added hotter product on the same pan. At this current cooling rate products will not cool to 70F within 2 hours. Advised operator to placed sheet pans in walk in freezer
