Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed cheese sauce (127 F - Hot Holding) at warmer. As per operator for less than two hours. Operator turned up the temperature of the warmer to reheat the product.
