Stop Sale issued due to food not being in a wholesome, sound condition. Observed a box of plantains on the floor underneath handwashing sink in kitchen area. Box of plantains had been wet with soiled water from handwashing sink. Operator had them thrown out.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed Chicken (56F - Cold Holding) in kitchen area inside of cooler and Cheese (47F - Cold Holding) in reach-in cooler at cook line. As per operator, products has been in coolers for less than 4 hours. Operator placed ice inside cooler to bring temperatures down for chicken and move cheese to bottom of reach-in cooler for rapid cooling.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed cooked Chorizo (101F - Hot Holding), As per manager, less than 4 hours. Product was reheated to 185F in less than two hours.
