As per employee all foods were placed around 8:00 AM this morning. Stop sale was issued.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed raw chicken (71 F - Cold Holding) in the kitchen. As per manager less than 20 minutes. Also observed fiesta corn mix (48 F - Cold Holding); cheese (45 F - Cold Holding); dice tomatoes (49 F - Cold Holding); lettuce (49 F - Cold Holding); guacamole ( 45°F - Cold Holding); vinegar tomatoes (53 F - Cold Holding) at both reach in coolers at the front counter. As per employee all foods were placed around 8:00 AM this morning. Stop sale was issued.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed chicken (46 F - Cold Holding) as per employee delivery came earlier today and kept the door opened. Employee placed ice on top of the chicken to bring temperature down.. Also observed lettuce (50 F - Cold Holding)at the front line. As per manager less than 1 hour. Manager placed lettuce inside the reach in cooler.
Employee has not received adequate training related to their assigned duties as evidenced by the inability to answer basic food safety questions. Employee at the grill was not able to answer cooking temperature of the chicken.
