Container of medicine improperly stored. Two bottles of medicine and one aerosol can containing medicine stored on shelf directly beside box of tortillas at kitchen entrance. An employee removed the tortillas from the area during this inspection.
Raw animal food stored over/not properly separated from ready-to-eat food. Flat of raw shell eggs stored on shelf directly above heads of lettuce inside reach-in cooler at cookline. Manager moved the raw eggs to another shelf during this inspection.
Time/temperature control for safety food required to be date marked is not date marked and time of opening/preparation cannot be determined. See stop sale. Date mark missing on container of coleslaw inside reach-in cooler near cookline. The container is labeled "Use First". Neither employee is able to determine when the coleslaw was made.
No proof of required state approved employee training provided for employee hired more than 60 days ago. Hot time/temperature control for safety food received at less than 135 degrees Fahrenheit. Inside warmer near cookline: cheese sauce (122F-130F - Hot Holding). Employee stated the cheese sauce has been held jn the warmer since 11am and began reheating it to 165F during this inspection.
No plan review submitted and approved - renovations were made or are in progress. Must submit plans and plan review application to DBPR H and R Plan Review office located at 2601 Blair Stone Rd., Tallahassee, FL 32399-1011. Plans must be submitted AND approved within 60 days. Owner stated they remodeled the kitchen several years ago.

Two-compartment sink used for warewashing. Two-compartment sink being utilized for warewashing in main kitchen. Establishment does have a three-compartment sink in the bar area.
Food storage container/container lid cracked or broken. Plastic pan containing seasoning cracked on shelf in kitchen. Employee transferred the seasoning to a new pan and discarded the cracked pan during this inspection.
Missing drain plug at dumpster. Drain plug missing from dumpster beside building.

Wet mop not stored in a manner to allow the mop to dry. Wet mop stored down inside mop bucket in chemical storage closet. Manager hung the mops to dry during this inspection.
Wet wiping cloth not stored in sanitizing solution between uses. Wet wiping cloth stored on corner of table near cookline. Emoloyee returned the wiping cloth to the sanitizer during this inspection.

Stop Sale issued due to food not being in a wholesome, sound condition. Six packages of tuna thawed inside reduced oxygen packaging. The tuna is fully thawed. Package does have a label indicating the tuna must be removed from packaging prior to thawing.

Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Six packages of tuna thawed inside reduced oxygen packaging. The tuna is fully thawed. Package does have a label indicating the tuna must be removed from packaging prior to thawing. Stop sale issued.
Dead roaches on premises. One dead roach on floor inside chemical storage room, near mop sink.
Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Green shelving inside walk-in cooler soiled with mold-like substance.
Time/temperature control for safety food thawed in an improper manner. Pan containing two frozen tubes of hamburger meat thawing at room temperature on bottom of cart at cookline. Hamburger meat is still partially frozen. Manager moved the hamburger meat back into the walk-in cooler to continue to thaw.
Unclean building components, attachments or fixtures. Walls and ceiling inside walk-in cooler in bar area soiled with mold-like substance.

Employee at cookline stated the pork was thawing. Inspector had employee place the pork into the cooler to continue thawing under refrigeration.
Unwashed fruits/vegetables stored with ready-to-eat food. Pan containing unwashed onions stored on shelf in kitchen directly above packets of ranch and bottles of mayonnaise. Employee moved bin of onions to the bottom shelf during this inspection.
