Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Observed quaternary ammonium concentration at 100 ppm. Operator redid solution. Rechecked concentration at 200 ppm.

Wiping cloth solution exceeding the maximum concentration allowed stored in a location that could result in the cross contamination of food, equipment, utensils, linens, single-service, or single-use articles. Observed a quaternary solution spray bottle at 500ppm stored hanging near liquor bottles behind the bar. The operator removed the spray bottle and diluted the solution to 200ppm.
Handwash sink not accessible for employee use at all times. Observed the handwashing sink in the dish area blocked by a a plastic container stored in the hand sink. The operator removed the plastic container form the sink.
Employee personal candy bar not properly identified and segregated from food to be served to the public in a reach in cooler on the cook line. The operator properly stored the employee food.
