Equipment in poor repair. Observed lettuce cooler with gaskets not correctly installed causing cooler to be unable to maintain lettuce at 41F or colder. Operator will keep lettuce in another cooler until it is repaired and able to maintain the lettuce at 41F or colder.
Food storage container/container lid cracked or broken. Observed several pans with burn or cracks in clean dish rack. Manager discarded.
Old food stuck to clean dishware/utensils. Observed whole rack of dishes stored at prep area with 13 dishes with food still adhering to surfaces.
