Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. 00 ppm. I had the operator to setup the 3 compartment sink with quaternary at 200 ppm. Spoke with my Supervisor. Establishment is on a 7 day callback. The person in charge was able to get the dishwasher chlorine at 50 ppm and temperature at 120F
Food-contact surface soiled with food debris, mold-like substance or slime. Can opener blade soiled. The can opener was washed, rinsed and sanitized.
