Nonfood-grade containers used for food storage - direct contact with food. Located in walk in freezer, imitation crab meat stored in non-food grade plastic container.
Raw animal food stored over or with unwashed produce. Located on cook line make table, raw beef, chicken and shrimp stored over green beans. Operator corrected order of food.
Handwash sink used for purposes other than handwashing. Hand wash sink in ware washing area used to store utensils. Advised operator to clear basin and make sink available for hand washing as labeled.
Food stored on floor. Various food items stored on floor of walk in freezer and walk-in in cooler. Advised operator to store food off of floor properly.
Ice buildup in reach-in freezer and/or walk-in freezer. Located in walk in freeze.

Employee began working with food, handling clean equipment or utensils, or touching unwrapped single-service items without first washing hands. Two employees entered from back door and began handling clean utensils and food contact surfaces in kitchen, no hand wash. Ordered employees to wash hands and clean equipment prior to continuing work.
Employee failed to wash hands before putting on gloves to initiate a task working with food. Advised manager to relay to employees to wash hands prior to glove placement.
Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized. Employee standing on food contact surface(prep table) to gain height to reach paper towels on top of walk in cooler. Employee did not wash and sanitize table after. Advised employee and manager to not use table until surface properly cleaned and sanitized.
Nonfood-grade paper barrier used in direct contact with food. Operator found to be using to go menus as an absorption surface for fried chicken. Observed 8 sheets pans on cooling rack. Advised operator to cease using to go menus and to only use food grade materials only for absorbing excess oil off of ready to eat food.
Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. In walk in freezer, raw pork, removed from original packaging, stored with raw frozen chicken, also removed from original commercial packaging.
Employee washed hands in a sink other than an approved handwash sink. Employee washed hands in triple sink. Advised to use hand wash sink for hand wash only.
Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Cooked chicken in walk in cooler prepared 2 days prior, not date marked. Advised operator to place proper labeling, operator acknowledged and placed proper date marking.
Cloth used as a food-contact surface. Linen rag used as moisture barrier for rice in cooked rice hot holding unit. Advised operator to remove and discontinue practice.
Employee eating in a food preparation or other restricted area. Open can of soda and several used water bottles found throughout kitchen on food prep surfaces and in walk in cooler. Operator removed.
Equipment and utensils not properly air-dried - wet nesting. Several plastic containers, stacked after washing, withholding moisture and not air dried.

Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Observed container of raw chicken stored over raw beef in walk in cooler. Educated operator on proper storage of raw animal foods. Operator placed chicken in proper location.
Operator is not properly tracking/marking the number of days ready-to-eat, time/temperature control for safety food prepared onsite was held at refrigeration temperatures prior to freezing in order to properly date mark the food when it is thawed and held at refrigeration temperatures again. Observed precooked chopped pork in walk in freezer not date marked.

Observed three compartment sink being set up with out cleaning before hand. Educated operator on proper cleaning before setting up three compartment sink. Operator cleaned sinks and set up three compartment sink properly.
Time/temperature control for safety food thawed in an improper manner. Observed ribs being thawed in standing water. Operator moved to allow to thaw under running water.
